Pumpkin Spice Latte Ice Cubes



So the minute August rolls around, my mind immediately flips a switch and all it can think about is Fall. Summer is my least favorite season (go on, sue me), and to me, August is a friendly reminder that Fall is upon us! I'm ready for deep hues, all things warm and cozy, Fall activities, ahhhh, Fall, how I love thee. Anyway, I'm really not here to talk about my giant crush on a new season...

You know it's Fall when Starbucks starts serving pumpkin spice lattes, aka heaven in a cup! Yesterday I had the biggest urge to have a PSL, but since it's actually only Fall in my own head, I knew I couldn't just go out and buy one. I frantically googled when Starbucks would be bringing it back, and it donned on me that I should just try making my own (I'm a genius, yes?). So, I found a great recipe, realized I already had most of the ingredients, and made a pumpkin spice! I'm not going to lie to you, I was sweating bullets while drinking it. It's still really hot out, and drinking a hot beverage probably wasn't the best idea. Was it worth it? Totally. Will I do it again? No. Seriously way too hot still. That's when I decided I didn't need to sacrifice my favorite drink of the season (a season that hasn't actually started, mind you). Instead, I made another batch and spread it throughout an ice cube tray and Pumpkin Spice Latte ice cubes were born!

To make your own PSLIC (Pumpkin Spice Latte Ice Cubes, of course), you'll need:
-1 cup of milk, divided
-1 tablespoon of white sugar
-1 tablespoon of pumpkin puree
-1 teaspoon of pumpkin pie spice
-1/2 teaspoon of vanilla extract
-1/4 cup of brewed espresso

I used this recipe to make a pumpkin spice latte. The gist of it is:
-Combine half a cup of milk, sugar, pumpkin puree and pumpkin spice, + the vanilla extract in a small saucepan over low heat. Let it simmer for 5 minutes and add in the rest of the milk.
-Add espresso and whisk for another minute or so. The recipe says to wait till it's foamy, but I was going to freeze it anyway and really, I didn't have the patience to wait around and watch it foam!

If you live somewhere were it's actually cold right now, say Australia or something, stop here. Enjoy your yummy pumpkin spice latte! If you live somewhere like California, where we just like to pretend it gets cold from time to time but really it's always in the 80s, go on and evenly spread your PSL into an ice cube tray. Let it sit in the freezer for about an hour or until thoroughly frozen.

Throw your ice cubes into a cold cup of coffee, add a splash of milk and let your taste buds enjoy the greatest drink of the season! PS the pumpkin spice latte turns 10 this year! More reason to celebrate it as long as possible, am I right??

  9. Ahhhh! Not fall! Let me be straight with you--fall used to be my favorite holiday. Then we had this terrible scary thing called the Polar Vortex in Wisconsin, and I never want to get anywhere close to winter again (but I do want fall at the same time... I need to move).

    Also, I'm the weirdo freak who does not like anything pumpkin! I've heard that Pumpkin Spice Lattes will be my answer, but I've been too scared to drop the money to try it. Maybe I'll have to this year...(maybe be drinking the PSL will be the answer to the Polar Vortex NOT returning???)

    1. Eeeekkkkk, yes I assume most people who experienced the Polar Vortex are wishing Summer wouldn't end! Also, the pumpkin spice latte will definitely make you a pumpkin lover! Starbucks is really good about giving a free sample if you want to try it by the way!

  10. This is such an awesome idea. I guess this could work for anything too. I love Starbucks Mocha Frappucinos, so would definitely do this with a coffee/chocolate mixture in ice cubes! Although, spiced pumpkin sounds really different and tasty.

  15. I always get nervous when trying a new drink because what if I dont like it? But recently I have been really into making flavored ice cubes! From iced coffee to ice cubes filled with chia seeds! It has been so fun!

  23. I'm not a coffee drinker but this reminded me of a tip I saw to make coffee into ice cubes so you don't water down your coffee. I totally want to do this with hot chocolate!

  25. I love pumpkin spice flavour drinks, I'm not a fan of coffee but when starbucks start serving pumpkin spice I always get them to make me a pumpkin spice latte without coffee. I'm going to be making these asap love the idea :-)
