Quick and Healthy Lunch Idea

I have some confessions to make: I hate cooking anything that takes longer than 20 minutes, and I'm afraid of turning the stove on. We have a gas one and sometimes the flames come out super crazy. So whenever I post any recipes, you know Andy was home because that's the only way the stove gets turned on. I'm going to be a really great wife!!

On that note, I've been trying to make quick and healthy meals more often, and I thought it'd be fun to share them on here! I wouldn't really call this a recipe, it's more of a meal suggestion...


What you need:
-1/2 cup of quinoa
-handful of kale
-heirloom tomatoes cut in half
-asparagus
-coconut oil 

Cook your quinoa to your liking. I don't do anything fancy, I just cook about a cup at a time whenever I feel like having some. I use the organic white quinoa from Trader Joe's in case you're wondering. A bag is only $5 and makes about 10-15 meals. In a pan, I liberally spray coconut oil and throw in the kale and cut up heirloom tomatoes. You can also use olive oil (or any oil, really) but I swear when you cook kale with coconut oil it starts to smell like popcorn. After your veggies are nice and popcorn-y scented, set them aside and cook your asparagus the same way. Add salt and pepper to your liking. Ta-da! We can all be wives now!

  1. I was snapchatting my domestic cooking pictures last night haha! "Ta-da we can all be wives now!" This looks good except I dont like tomatoes. But my go to meal is definitely chicken with some sort of potato - baked, mashed, last night was diced and cooked in a pan - and a veggie - usually asparagus or green beans, last night was broccoli :) SO UNIQUE. lol

  2. haqhahaha I love that "We can all be wives now!" Our oven does the same thing and within 5 minutes of having it on the fire alarm starts going off without anything even burning. The first time it happened when D wasn't home and from then on I'll only cook when he's home. Or better yet, he'll just cook. You and I can just be wimpy wives together! This looks super yummy though, and would be a good break from our usual shakology shake dinners (they're gross, but necessary I suppose)

  3. Omg! This looks REALLY yummy (minus their heirloom tomatoes, but that's only because I'm weird and not totally into tomatoes). Haha. My go to meal is stuffed bell peppers or chicken and veggies! Both are super easy to make and totally yummy. Also, I may or may not be known for my spinach artichoke dip. *wink*

    1. LOVE stuffed bell peppers! Also, the more I eat tomatoes the more I get told by others how much they DON'T like tomatoes! It blows my mind haha. OH WELL. More for me ;)
