For the doughnuts...
I used a mini doughnut maker that I got on sale at Target for $8 (SCORE!). The original recipe is pretty lengthy, but I'm just going to confess now that I never follow any recipes. I enjoy winging it...it makes things more exciting! I basically ended up making a chocolate cake mix and turned that into doughnuts, but if you want to get really fancy here's the actual recipe that inspired me to make these!
-1 cup of coconut flour + 1 cup of almond flour mixed (I find these flours are tastier than rice flour when it comes to gluten free options)
-1/2 cup of cocoa powder
-1 1/4 cup of water
-1/3 cup of vegetable oil
Mix all ingredients together. Coat your doughnut maker or pan with coconut oil and add mixture. Bake!
For the glaze...
It's REALLY important that you use whole milk for this. I used fat free and had to add cornstarch to thicken it. Original recipe here.
-1/4 cup of whole milk
-1 teaspoon of vanilla extract
-2 cups of confectioners sugar
Combine milk and vanilla in sauce pan and heat over low heat till warm. Sift sugar into mixture. Remove from heat, dip doughnuts into glaze and place on plate. Decorate with festive sprinkles!
