It's Sunday afternoon and I've been parked in front of the television for about 2 hours now watching football. Not because I love football, but because I love my football loving boyfriend. He's watching about 9 different games at the same time so I have no idea what's actually going on. I think he's tried explaining football to me about 100 times, but I just can't get into it. Luckily, a lovely breakfast can make up for everything!
Our breakfast was had in front of the television (of course) with little cone head Duke staring us down in hopes of some human food. I love making breakfast, mostly because it's always quick and easy but so delicious! This morning we had gluten free waffles with almond butter from the farmers market (yum!), berries, and orange juice. I experimented with some eggs and avocados and I'll definitely be going back to this when I'm wanting something filling and quick to make.
To make this simply crack an egg into half of an avocado, add pepper and any other spices you desire, bake for 20 minutes at 350. So yummy!
I love having such easy Sunday mornings, and nothing makes me happier than lounging around with my two boys...even if it means watching a sport I don't understand!
